BAILEY WINES
Bishops Stortford
BRUSCO
Brighton
The Licensing Guys are delighted to have obtained a Premises Licence for the soon to open Brusco Restaurant in Brighton. It will be a refined and intimate modern bistro style wine-bar designed to enhance the vibrant character of Montpelier Place. With seating for approximately 20 patrons, the focus will be on providing a relaxed and sophisticated experience centred around premium wines and carefully curated small plates and light bites.
This warm, intimate, and community-integrated space will enhance the diverse character of the area by providing a relaxed and thoughtful experience centred around a small selection of carefully chosen bites and plates, premium wines, and a refined food and drinks menu. The aim is to enhance the desired diversity of the area's evening economy.
Operating a low-impact, quality-focused model without late-night events, guests will enjoy quality produce in an environment where community safety is a principal value; the premises is fitted with full internal and external CCTV coverage, and comprehensive staff training covers Challenge 25, refusal of service, and incident logging. The venue's intimate size allows continuous supervision in a calm, seated environment, with no standing bar service or accommodation for large drinking groups, enabling careful management of door closure and dispersal after 22:00 hours to encourage guests to leave quietly and respectfully, alongside maintaining ongoing contact with neighbours.
This modest application was written with regard to the unique considerations of operating within the Brighton Special Stress Area and demonstrates a clear commitment to being a responsible and valuable addition to the community. The smaller scale is inherently less likely to contribute to the cumulative impact concerns regarding large crowds and dispersal issues. The proposed operating hours are consistent with the Council's matrix guidance for similar quality, food-inclusive establishments in the SSA, aiming for a terminal hour which is earlier than the advised midnight for licensable activities.
Congratulations James, and best of luck with your new, exciting business!

Il Cortile Artisan Italian Restaurant
Warfield near Bracknell
This week also saw Nick and Jess from The Licensing Guys travel down to the sensational Il Cortile Artisan Italian Restaurant at Warfield near BRACHNELL to assist hands-on in the transition of the Premises Licence from the previous to current owners.
There's a lot to be done, re the s51 Authorisations, Staff Training, Incident Book, Refusals Register and CCTV Check Log Book - but the food and coffee made it all worthwhile. Good luck with your new business, Giorgio and Federica!
Chapos at The Caledonian
Wigan
This is our best good news story all week, and a great way to start the month!
Garry and Lauren took on a dilapidated and bankrupt pub in Wigan in 2023 and have turned it around. They have put on numerous community events in their grounds and used up their annual allocation of Temporary Events Notices in just six months. They therefore applied to extend their closing time until 01:00hrs every night, and license a temporary bar in their backyard of their pub so that they could continue to grow their business.
Unfortunately six people objected, and the Council awarded four of them anonymity because apparently they felt intimidated through a 'genuine' yet unexplained and unevidenced fear of violence. However the community rallied round with letters of support and well over one hundred supporters placed comments on the Facebook page of the local newspaper covering the story.
The Hearing was held at Wigan Town Hall in the impressive Council Chamber, and the Public Gallery was packed by customers who had taken the day off to come down to show their support. The Licensing Guys made the case for the pub, a local councillor made the case for the anonymous objectors, and the Committee decided - to grant the varied Licence as applied for - Result!
Here are Gary, Lauren and a few of their supporters after the Hearing on the steps of the Town Hall. Well done, Chapos!
The Co-operative
Walsall
This week saw The Licensing Guys training a class full of Store Managers for Midcounties Co-operative in Wolverhampton Street, WALSALL.
As you are aware, all Co-ops are licensed and we have the honour of training the store managers who will be assuming the role of Designated Premises Supervisors at stores across the Midlands in the coming months.
COVID saw a massive expansion of online courses as people had no choice than to study at home on their own computers as nearly all class-based learning as suspended. Indeed, may of you will have studied online through us available on our website here: https://thelicensingguys.com/product/aplh-rqf-award-for-personal-licence-holders-qualify-at-home/
However many students and organisations prefer in person training through pop up classes on their own sites, and this is one such example. We have other courses for the Co-op in Oxford and the Forest of Dean next month.
Some customers want us to come to their pubs and train their staff there as well. This coming week we are in Grantham, Lincolnshire. So, if you are a Local Pubwatch or large venue and want us to come to your premises to train a class of your staff, please get in touch with our new Head of Training by email at: carline@thelicensingguys.com

They came to the Licensing Guys for a smooth application and speedy authorisation.

Nick Semper and the Licensing Guys did a brilliant job for us. They prepared our application for a Premises Licence for our vineyard quickly and efficiently. We received a number of objections to our application and Nick managed the process well. He discussed the objections with the licensing authority and we were delighted when our Premises Licence was granted without being referred to the sub-licensing committee of the licensing authority.
